What's an Italian doing in Bregenzerwald?

Is it the clear air, the peace on the mountains, the silence of the forest or the fresh green of the countryside? Of course I find all this great and enjoy every day what the forest has to offer - either on my road bike or in my hiking boots.

But what I love most are the people who live here, because we share basic principles with each other: Appreciation for natural products of the highest quality, respect for quality craftsmanship and a keen sense of the balance between local traditions and new innovations.

These values should be included in every package of coffee that leaves the Trevo Coffee Roastery - without exception. How do I do it?

. I consciously select the raw beans.
A high-quality cup of coffee is the result of many people who do a great job. This passion must be respected and rewarded through fair conditions.

It is important to me that sustainable agriculture is carried out on the plantations.

 

. Only the freshest green beans from the latest harvest end up in my small drum-roaster.

Coffee is not just coffee, so I search the best suitable roasting profile for every type of coffee (Arabica variety), because every bean should be able to develop its full potential of taste.

. Through the roasting process, each coffee can sparkle in all its richness and fascinate us with every sip of the colours, tones, people and culture of the country where the coffee (Single Origin) comes.

Each bean has a unique and complex taste and is waiting to be discovered.

La vita è un viaggio…

 

My journey into the fascinating world of coffee began early - before I even knew what Arabica or Robusta tasted like.

Already as a child my father Roberto introduced me to the secrets behind a cup of coffee: the colorful countries where the plants grow, the hard-working farmers who grow and harvest the coffee, the passionate roasters who play with the aromas and the barista who are always looking for the perfect brewing method.

For 10 years now, I have been in the happy position of working with coffee and getting to know, explore and understand this little bean better.

Experienced coffee in all its aspects, as a barista in daily business, as a brand ambassador at international trade fairs, as a product developer for a large Italian roaster, as a SCA-certified trainer for barista skills and roasting, as Arabica QGrader, now, as the owner of the artisanal Trevo Coffee Roastery in the Bregenzerwald.

A cup of coffee means so much more than just caffeine.
